EDI is a she because a ship is typically considered to be a female. It would be wrong to have a male voice and still call the ship a her.

The pic is zoomed in, and now she has a turtleneck of sorts on her armor, as well as different armor. Also the blue biotic cloud around her is obscuring her waistline and making it seem bigger;  if you look close is the same slim-self, So yes, she does look heavier, but really she isn't because of the all the special effects.

on the left picture the face is a bit wider but she's also leaning forward while the one on the right is not

Her waist is still pretty thin, though. It's possible it looks wider b/c of the biotic effect (and the random blood splat in the background).

I'm not noticing any great increase in chubbiness.

And even if there were such a thing, it would be justified, in-game. She's leading a more sedentary lifestyle now, you know.
