I never considered sexuality to be a defining factor for any Bioware character. To me Leliana and Zevran are first and foremost an Orlesian bard/Antivan assassin respectively and not "that bisexual girl/elf".
That said I do realize that as a straight guy I've been spoiled for choice in Bioware games when it comes to available romances, while bisexual/gay playerbase ends up with crumbs (if they're lucky..).

but lets face it, if zeveran didn't come off as a horny toad, he woudln't be the same, an assasin/bard/rogue is not only defined by thier character choices.
what i think they should do is make all not "bi" but romanceable by BOTH sexes, meaning that they can become gay/straight/bi depending on the players choices in that playthrough-
some chars like isabella who have a history of having sex with anything that has a heartbeat (well im assuming thats her minimum standard

), should have thier sexuality written into thier character, others like morrigan, part of thier character have thier sexuality written in as in how they use it-
as much as i am loathe to admit it, morrigan bieng a female characters love interest in dao would have taken away from the very plot of her intentions and dark ritual to begin with.
so IMO sexual orientation should NOT define a character, but thier sexuality should HELP define who they are as much as if they are eloquent, intellectual, playful, mean, stoic, etc.
i would say unless there is a damn good reason not to- then characters should be available as li's for BOTH genders and group options. however, granted, some should be harder to romance than others- maybe just MAYBE that includes different levels of difficulty for different genders. but the experience in each playthrough should be defined as much as possible by the player.
