Good thing you didn't, since it's just plain not true. Gavorn's one example. So is Shisk (he'll still be there after Mordin's recruitment if you didn't talk to him before, so no, that wasn't him at the end of it). Then there're those batarians looking for trouble in the Afterlife entrance hall. At least half of the shopkeepers in the game are completely quest-free too. Even the ones that are are mostly involved in ways that amount to slightly more elaborate methods for obtaining discounts. Oh, and the Clan Nakmor ambassador and the Urdnot's Lord High Researcher (he's sort of a shopkeeper, though, I suppose. Still: counts). Add in most of the bartenders.
Even some of the people who are technically part of a mission are really just there so you can hang out and chat and serve no essential purpose: looters, plague victims and refugees on Mordin's recruitment, the merc bosses, subordinates and freelancer on Garrus', the guard and prisoner on Purgatory, the Biotic God, etc.
And, saving the best and most ironic for last: Aethyta herself. She's not really part of any quest and she's also
completely irrelevant to the plot. Her possibly being Liara's pseudo-dad is pure trivia.
Footnote: it's amusing that many have complained about a number these apparently purposeless people precisely because they lack direct plot/mission relevance. Truly, you cannot please them all. In some cases, not even some of the time, it seems.
