I give up -- how, please, do I open the treasure chests that are locked?

Leliana is a rogue who is very good at opening chests. Add her to your party and try opening them using her.
Yeah, this is pretty much the only reason I carry Leliana around with me, aside from being a potential romance (which doesn't matter I guess if you just give her gift items). My last character I built as a dps rogue exclusively and just leveled Leliana up for lockpicking.
But to be totally honest, there's literally nothing in locked chests that you need and they are really only good for some extra pocket change - you can live without them.

Some locked chests contain items for side quests...letters and such.
I don't remember any of those... maybe a love letter or two. Pretty sure most of the important stuff is not in locked chests.
If your goal is to complete every single side quest in the game, sure - you may need to pick some locks. But really, a friend of mine went through the game not looting a single locked chest and he got through it fine.

Yep, most of the stuff in chests is vendor trash, small amounts of money (sometimes good amounts of money), gifts, and the odd poultice so it's entirely possible to go through the game without picking a single lock. But the OP mentioned they were trying to finish up side quests so I wanted to mention the letters.

Other than that, I think I succeeded for a majority of the eggs in the game, minus a few traps and entries here and there. Either way, my main character was 24 at the end of origins, which was amazing to me since the first character I played was only 18-19 at the end (but I didn't have all the extra content either). So, yes, I think you do get quite a bit more exp with all of those disarms, picks and codex entries.

Oh man . . . it takes forever to gain experience points . . . I wonder how many I can get if I go back and unlock everything? Enough to level up a couple of times?

I believe that if you have a Rogue with a high Cunning (50 or so), Device Mastery won't be necessary to open any chests. The same goes for Coercion on your Warden, where if you have a decent level of Strength and Cunning, you won't need more than Coercion III on any skill check in the game. Feel free to get all of them to be safe, but it shouldn't be necessary.
