By what do you judge his physical age? Did you think his heart and brain were completely dead up until the point Miranda woke him to move his butt? he was born in 2154 and it is now 2186
Shepard is therefore 32 chronologically but we subtract 2 years due to him being a charred corpse for that time.

Also, remember how humans age better than they used to. For instance, Kahlee Sanders in the novels is in her late forties in Ascension and Retribution, and yet is commented in both to physically look closer to her late 20's.

So 29 during ME1 and chronologically 31 during ME2

Actually, Shepard is phisically equivalent to Grunt or more. He was strong in ME1 and even more in ME2 thanks to the upgrades he mentions to TIM at the beginning of the game from the Lazarus Project.
Even more if you researched upgrades for him, wich make Shepard even stronger (remember the unbreakable bone one?).
