I'm building a massive estate level and I would like to include a greenhouse/atrium. These structures generally have glass walls and a glass ceiling. Does anyone know of models that would be good to use for this? Failing that, can anyone think of a workaround? Thanks!

There are no vanilla models you could use that I am aware of, not for the glass parts anyway. Possibly you could make use of some vanilla pillars and other structural elements, but a good deal would likely need to be custom models. To a fair degree it depends on what it is exactly that you are trying to achieve. Do you have any pictures of the sort of thing you are after?

Building a basic structure with pillars/boards in an outdoor area sounds workable. I could really use advice on how to make it seem like there are panels of glass between all those boards. VFX? Walkmesh Cutters from NWN2 seem to be called something else now, what's a good search term for getting at DA's version of the funcitonality on the builder wiki? Thanks!

No idea - you'd need to ask someone familiar with the NWN toolsets.
You could conceivably make a fairly simple glass sheet model (just a box basically) and see what you can salvage from the vanilla models for the timber/metal framework, but I suspect you'd really need to model the whole thing from scratch to get any sort of decent result. Especially if you want something a bit fancier like, say, the glasshouse at Kew for example:
