Can anyone tell me of a custom head hak that has heads, headdresses and helmets with a sort of ancient middle eastern look (Babylonian/Assyrian/Phonecian)?

I couldn't find any pics of examples of headdresses or helmets from those cultures. Do you have examples? There may be something similar in a Kara-Tur or Mazteca themed .hak.

Would ancient Greek work for you? Ben Harrison has a Greek Helm Heads pack, which includes some from trooper9's Fangfeymim Greek Set.

Well, unless there is private PW content out there with something like these, I have personally checked every single hak in the NWN Vault over the years, and there is not a pack of such characteristics, although there are lots of individual models lost in a myriad of packs. There is a "Prince of Persia" head, the "Jack Sparrow" could also cut it out, and some of the KOTOR Heads look eastern enough. There are also several modifications of the original Bioware heads for the bedine and desert guard...
Sadly, I cannot forward them to you, since I presently have none of those. You would have to work through the anatomy haks and combos for PWs in order to fined them.

The only thing that comes to mind is the one desert sheik looking head that is standard with NWN. I'd be *very* interested in any Egyptian style heads should you happen to find any. We have one custom Roman head in our haks, but there are now several of those types of things now (the ones Bard pointed out above). Good luck!
