Full on spoiler here:
I replayed this battle a number of times, sometimes siding against both, sometimes just the fire giants (clearly the dragon would not be defeated just by me). My crew was Neeshka, the dwarf fighter (Khelgar?), and Jerro the warlock. My PC is a wizard. The best I could do was get the dragon down to near death with the fire giants mostly wiped out but my wizard, the last standing, couldn't tolerate his attention for more than 1 second. If I sided with the giants, they of course would turn on me when half the party was dead and with no healing available.
So then I figure I will try again but time with Sand instead of Jerro. I figure more nuking was needed for the dragon and more area spells to help bring down the giants at the same time. So I walk the huge distance back down the mountain to find a world map thing (is there a mod to make it so you can do this from anywhere?), then get all the way back to CK and start to setup. Somehow it dawned on me to click more than 3 NPCs for my group, I didn't even see the player count. You get 4 to help you!? Funny. With Sand and Qara, I squashed them pretty well. Qara has the really long 100% resistance to energy spell. No more burning down my tank with fire breath. I think everyone was still standing when the giants attacked. Qara can really knock down a lot of enemies.
Thought others might be amused at me having tried it missing 20% of my available group and nothing to combat the fire breath but partial resistance and lucky saves. The thing that kept me baffled was how easy the fire giants toppled over to my 4 person group when climbing the mountain, and then how hard the fight was up there.
Travel in this game is sooooo time consuming and not fun. A great mod would be to have the wolf kid follow you around in permanent ethereal mode and always let you go to the world map.
Dragon and Fire Giants, with only 4

Shandra may be dead, but you still have that extra slot for a companion.
Sand and Zjhaeve also have Energy Immunity: Fire. I think Grobnar can have it, too. I hate Qara and Bishop and Ammon, and their voices, so they are only in my party when required by the plot. Even with enough immunity spells to go around, you might want some fire-resistant gear... if you get knocked down, certain spells get knocked off.
Be sure that all familiars are unsummoned. Even if a spellcaster has immunity, they'll suffer when their familiar gets toasted and the dragon wants s'mores.

Oh, forgot to mention the console cheat. If you hate traveling back to the Keep to swap out party members, the code is [ rs kr_roster_edit ] when you are in debug mode and the PC is the selected character. This pulls up the dialogue box.
press the tilde key
type " DebugMode 1 "
type " rs kr_roster_edit "
type " DebugMode 0 "
press tilde key again
Be careful... some people HAVE to be in certain areas or it might break the game.
However, this does save a lot of time.

Can you do the dragon with only 1 companion?
I recommend Zjhave, for the buffs.

The summary of my wall of text is:
Didn't realize I could have 4 companions, kept beating my head against a wall with 3. Travel sux.
Thanks for the tip on swapping. Though I would prefer a cheat to get around quicker.

Not done OC in a long time, i did it with a wizard and i'd bet you can solo this but you'd have to know the game pretty well.
Flesh to stone and some luck seemed to take down that dragon, can't remember how many i cast but i barely remember the fight except how he lost it so fast, at which point i started turning the fire giants to stone as well ( i had taken spell focus transmutation feats though which likely helped this tactic ). I was happy since all i was doing up to that point was casting undeath to death and was thinking flesh to stone was never going to be needed. I had metamagiced undeath to death in my 7th and 8th slots and kept finger of death in my 6th for my wizard. I would guess ( not played this in a long while ) the giants would not like reflex saves. Dropping some grease spells all over the place, lots of them, i bet would help alot if they have low reflex, i do that for the fire giants on my PW and it's pretty funny watching them learn to skate.
Of course "dragon" and "fire" indicate casting immunity to fire on your party like someone said, and looking for spells like ice storm or which say "cold" which hopefully do increased damage. Don't forget ethereal jaunt type things as well, and keep your party spread out so an AOE does not get you all at once. Ice storm has a pretty long range so keep those support wizards far away as you can. ( Seem to remember this is not really a choice though as every convo with the enemies ports your party within melee range destroying any chance at ranged tactics. )
Other thing to look at is spells like confusion, dominate, which use will saves, another thing i'd suspect a giant is not so good at. Target not the leader but one of the minions of the fire giant with such spells, and once you get him under control start casting buffs on him which should make him able to take on his buddies, just make sure you feed him to the dragon at the end.

Use the cleric and blade barrier, that with my mage, druid, dwarf and monk we kicked dragon butt.
