Can't use NWN and NWN2. Those belong to Wizards of the Coast as part of the DnD world.

It's not a new class, but I really would have enjoyed an apostate mage origin. As the game demonstrates, not EVERY mage is found and rounded up into the circle...

Medieval European Monks wouldn't be the sort of monks people would particularly care to play. The closest Dragon Age equivalent to what you are looking for is probably the Silent Sisterhood. These mute dwarven females fight primarily using unarmed combat styles and, oddly enough, nunchaku. Aaand that's about all I know about them. I was kind of expecting one to show up in Dragon Age as an adversary for reasons related to the book The Calling.

[spolier]This may be a spoiler but when you do the quest in Orzamar to help pick a king you fight a Silent Sister in The Proving. btw she was not using her bare hands either that girl had a sword.[/spolier]

As far as classes, I can't really think of anything. What I'd like to see are more specializations and tuning of already present, unpolished classes, such as ranged rogues.

I've got two Origins I'd really like to see added. The first one is Human Commoner, and the second one is a Keeper (Dalish Elf Mage) Origin.

Two ideas:

One: a class that uses magic, but with a different mechanism, maybe instead of starting with magic points they could build points as they battle. They could be priest or cleric or hedge mages or what ever works story wise.

Two:I would like to see a demon/dark spawn origin

First off, definitely an apostate origin, along with a human commoner.

Secondly, I believe this was hinted at or cut from the game, but I would like to see a Barbarian class. As far as the specifics though, I just tried to come up with something unique that would fit the lore and role. This class as I envision it would obviously take some aspects of the warrior, however I the heavy and massive armor would be out. Also, there would be more emphasis on nature damage abilities, be it aura's or personal spells. Definitely not a mage, more like a genuine hybrid with damage buffs that for personal and party use. The difficult part would be presenting the talents and/or spells in such a way that created a unique experience, instead of a pre-determined path to create something that is already available

I have been thinking this myself, was tinkering with the idea of a dwarf surface dweller (top sider) story as the circle does not consider the dwarfs able to wield magic and their is already established lore suggesting that once dwarves go topside they overtime lose their resistance to the ore.  Anyhow working on something currently.

i'd like a mentalist class ... one which gives a chance to control enemy units. it's probably a balancing nightmare for developers but i've seen it work before in a game many many years ago.
