I unlocked the cap on my first playthrough, then got to 57 on an "import playthrough". However, wanting to get to level 60, I just opened the console and gave Shepard a ton of xp before the final battle...I don't plan to mine all those minerals and travel on those annoying barren planets with the Mako ever again.
What level were you when you completed the game?

My first playthrough my femShep was level 44, but I didn't do all the sidequests and let the Mako kill everyone we faced. My 2nd time through I hit level 56, but I did every single sidequest (Minerals, Turian Badges, etc,) and I used the Mako to whittle the Colossus' down before getting out to kill them and everyone else.

The highest that it's possible to get is just over level 58 (I don't remember how much XP). The only way to get there is to do every side quest, find every mineral, and get out of the MAKO for every kill (including Thresher Maws).
Even on the Xbox, there are exploits that you can get infinite XP, but that's the highest you can get without cheating.

In one play through I got to 58 and thats the highest I've gotten.
