Recently I finished a game up with a solo fighter in insane difficulty. Here is a summary of the events:
Tale of Eric Windblade

Tarnish is too hard for this fighter, Eric retreats. There is a flaming fist soldier declaring himself to be the law, and mistakes Eric Windblade for a bandit. They get into a conflict and Eric prevails, taking the flaming fist armor for himself.
    The -2AC that Eric Windblade has seems to be the armor class to have at least in the early maps.
Eric Windblade kills Bassilus and takes his magical warhammer. It appears that if one runs away far enough, spells simply dissipate.
    Eric Windblade meets up with Minsc who attacks him for refusing to save Dynaheir. Minsc gets chunked in the process.
    In order to get the Gnoll Stronghold on the map, Edwin needs to be invited into the party. He is immediately booted out however once Eric gets the Gnoll Stronghold.
    I'm not sure if I needed to do that, I just didn't know where the stronghold was. Seems you have to go a certain way to get to it.
    It seems that Eric Windblade made an error. Eric believed that small swords encompassed long swords as well, apparently not. The Nashkel Mines are cleared. Eric cannot defeat the assassin in Nashkel, well neither of them(another one popped up on his return).
    This is no problem, the wrong weapon proficiency the short sword+2 is acquired from a bandit, where Bassilus was. Eric goes to High Hedge and buys up the protection from magic scroll, wand of sleep, and three potions of magic blocking.

    Lighthouse Sirines
It took sometime but Eric Windblade finally was able to defeat the three Sirines and he only used one potion of magic blocking. These enemies like to use dire charm and feeblemind.
    Killing the flesh golems was a much more difficult task. Finally had the inspiration to use the potion of absorption, since golems tend to do blunt damage I would suppose.

    Cloakwood Mines
Eric gets in trouble with two of the battle horrors guarding Daveorn. Eric goes back out to see what items, if any can help him deal with these powerful enemies.
    He goes to High Hedge and purchases a protection from undead scroll, the wand of magic missiles, three potions of exploding(these work as fireballs), potion of regeneration and two potions of fire resistance.
    With fire resist up to 100, Eric takes out the battle horrors using four potions of exploding. Drinking a magic resistance potion(he had three) he takes out Daveaorn as well.

    Baldur's Gate NW Section
With potions of heroism, oil potion, and cloud giant strength potion, Eric Windblade is able to take out the doom guards and other tough enemies guarding a named wizard's home.

    Candlekeep Return
Two tomes in candlekeep dungeon, not sure which one was strength so Eric took them both. Use potion of cloud giant strength and stacked the bhaalspawn ability Draw Upon Holy might to bust open the lock.

    Ducal Palace
This battle was won very simply by wand of sleep. I read somewhere here that doppelgangers were weak to 'sleep' so I had Eric Windblade use that to his advantage. Using oil speed, fire giant strength potion, and DUHM, not sure if Eric used heroism, he waded into battle, using wand of sleep and having the doppelgangers focus on him and not the duke/duchess...he won the battle. I suppose if there was a party involved, surround the duke and duchess would be the first priority. I also learned that Sarevok would be doing massive damage.

    Iron Throne Party
When Eric reaches the underground city to find Sarevok, he is assailed by a party from the Iron Throne. This battle seems to be difficult, until Eric uses the protection from magic scroll. With this scroll, it negates the cloudkill that the enemy mage tosses out. This cloudkill helps Eric! Just like in the battle against the two assassins in the Undercellar, cloudkill manages to kill two of the enemy if I can recall. Eric later leads some of the Iron Throne members into some mazelike complex and leaves them there lost. He kills the wizards with his dagger of venom.

    The Battle with Sarevok
At this particular juncture, Eric had depleted several of his resources. The truth is, he didn't prepare that well for this battle. However it did not really matter. The key to this battle is to separate Sarevok from his lackeys. Or at least, separate him from Angelo. Angelo can kill Eric.
    There are several traps in the  center of the room, so Eric appropriately buffs with two potions of magic resistance. This is after he buffs with potion of heroism, potion of power, and potion of storm giant strength. He also wears the ring of free action. He manages to get 75 percent resistance because the first potion end up 'negating' the others. The extra 25 is from cloak of balduran. Eric Windblade manages to get in a couple shots with the short sword of backstabbing +3, but has primarily ran around throwing darts of stunning at Sarevok. The darts of stunning are the finishing blow against Sarevok, truthfully because they were the only missile weapons which Eric Windblade had, aside from darts of wounding which actually did not do much at all against Sarevok.
