There are quite a few hints about going into the tavern, both from Morrigan suggesting it, the gossips outside commenting on stuff happening inside and (not positive), but i'm pretty sure I got a quest to go in there as well and as soon as you do you get her cutscene. Though I do agree that there is no 'real' hint that Lothering is doomed the instant you leave, it could be said to be implied that the darkspawn are right on your tail.

There is no "choice" There are a set number of companions you can get, and she is the only bard. Not everyone is going to restart the game after putting dozens of hours into it.

You went into a town that was about to be sacked by the darkspawn. You made a CHOICE to not explore it, even though one of your companions suggested you head into the tavern. Instead, you left it to be destroyed. Shockingly, all the other content in that area is gone as well.
If you can't be bothered to explore an area, don't be surprised if you miss something. Yes, even major somethings.
