But, what would really make me scramble to type in my credit card number would be...
Mass effect models of ships and vessels... Normandy, Soveriegn, Destiny Ascension ..etc. I'm thinking of ones that are highly detailed, made of good plastic and which you glue and paint yourself. Similar to the kind of stuff you would find in the Games Workshop type places.
Then all I would need is nylon twine and hooks to hang them from my ceiling!
Hmm... what about a gigantic Citadel model! Ok, ok, I'll stop now.

Assuming it is all well-made...
For myself, I would like metal dogtags, metal keychains, and either the messenger bag or the backpack.
As gifts for friends and family, I would be tempted by the wallet, the laptop bag, the dogtags, and the keychain.
I'm also pre-ordering Joker's hat as soon as it appears.
No personal interest in the cold-weather clothing (too near the equator). I am pleased to see women's sizes listed though; maybe it's a sign of things to come? There are shirts already in the store I would get in women's sizes.

More subtle products are nice, I would like to see loads of things with little N7s on them, as if N7 is a brand like Nike or something.

Not too thrilled about football jerseys and such.
I will echo the quality materials aimed at adults request though - international shipping is high anyway, if I'm going to drop a lot of money, I'd rather pay more for a few durable, high quality items I will actually use than a bunch of cheap tie-ins I'd be slightly ashamed to own.

Awesome on the shot glasses, they're one of the best things to collect. Have you thought about also doing location shot glasses? That's how they normally appear in the real world, and who wouldn't want Afterlife or Illim shot glasses? I want ones that look like I'm touring the ME universe.
Also, massive support for models of the ships/stations, although I would want them pre assembled as the Halo Reach statue almost made me wet myself with fear of breaking it. Also, HANAR HAT! and plushies.
You guys must love this, a fan base just asking to be milked via products.

...on the one hand, it would be great to have replica ME2 shot glasses - looks like they hold around 2oz. have a glow-in-the-dark rim, no captions, etc....would be great for darker parties!...though it would be difficult to make it both dishwasher safe and make sure the glow-in-the-dark effect lasts...
...on the other hand, there currently exists LED shot glasses that might be cool - only ones that i know of are pulsating ones that they use in rave's, but something a bit tamer would be good...like just a constant blue (lyrium) or red (health) light?...i dunno.

keyrings could be a freebee, like spend $100(on apparel?) & pick a keyring for free type thing.
(not sure how you would package that sort of thing if it was art-based)

wow, the fist thing that comes to my mind is definately not low quality. I know that you own a shop for this sort of thing so I guess you've had many collectables pass through your shop, and for that reason you'd know what quality looks like - but wow, I thought Shep Statue was kinda cool. Well done too....

That would be AWESOME.
And seeing as The Reapers are the main antagonist of this trilogy, I'm surprised that there are no merch for them. Man, a Sovereign replica ship (such as those in Shep's chamber) would be sooo friggin awesome.

Edit2: Also want to echo the call for mature designs. I'm a 30yo lawyer, I can't rock a lot of this gear like I used to. Also want a Wrex plushie A LOT (but more in the classic, huggable hairy teddy bear look...)

I have no problem with pricey so long as quality is up there. I don't expect Talbots, but I do expect more than the Walmart clearance rack.

And while I understand the desire for more mature stye clothing, I can't imagine wearing a Mass Effect-branded anything to class/lab/ the OR. I wear normal, plain dress clothing when I need to, and throw on the licensed apparel when I get home or go off around town. I don't think anyone is so in love with this game that they need to wear this stuff to work.
