I've been thinking a lot about restructuring some of the loadouts, for roleplaying and gameplay reasons; a few ideas are posted in this thread:

Adept: Heavy pistol; Assault rifle.
Bonus - Shotgun.
Vanguard: Heavy pistol; Assault Rifle; Shotgun.
Bonus - Claymore.
Soldier: Heavy Pistol; Assault Rifle; Shotgun; Sniper Rifle.
Bonus - Revenant/Widow/Claymore
Infiltrator: Heavy Pistol; SMG; Sniper Rifle.
Bonus - Widow/Shotgun.
Engineer: Heavy Pistol; SMG.
Bonus - Shotgun/Assault Rifle. Mostly shotgun.
Sentinel: SMG; Heavy Weapon.
Bonus - Shotgun/Assault Rifle.
Some things I'm not too sure about.
Engineer - I like this class to be about all the toys you have to play with (including powers). I'm considering adding heavy weapons (something like the avalanche, or other techy heavy weapon).
Sentinel - The heavy weapon class for me - the visual effect of the tech armour makes this seem like a good choice.
Infiltrator - I've considered giving shotgun from start, instead of SMGs, but then with sniper and pistol everything is one shot at a time - could get boring.
As a rule I feel biotic classes can have the assault rifle, because of the nature of the class - using the mind/body to unleash powerful attacks; whereas tech classes need to be fiddling about with their omni tools, so carrying bulky weapons doesn't seem like a good idea. SMGs go well with tech classes, for me.
Edit: I'm sorry, I just saw you said 2 weapons per class.

Edit 2: It is also worth noting that I frequently play on NG+, and so have the bonus weapon choice available from start.
