In conversation with NCPs should I always take the sensible answer, by that I mean, be honest, try to get out of a fight if possible.
Or when someone confronts me, should I just take the agressive stance?
I have been confronted a few times and taken an aggressive stance. Then I had guards attack me when I didn't even start the fight. Because I was a murderer.... I couldn't even get out of the situation.
Also how bad is it if you take the path of an evil player in this game, slaughtering everyone you meet etc...?

The more evil you are, in general the harder the game is. Your reputation suffers and as a result, shopping is more expensive. Also as you have discovered, you get attacked, with the result that your reputation gets even lower. You can raise your reputation by giving to a temple. If your reputation is already high, it takes a lot of gold to raise it one point, but if it is average, it takes less. Do a search on reputation, and you'll get all the info that you need.
There are some characters who will only stay with you if your reputation is low.
Some will only stay if it is high.
If you kill everyone that you meet, the game will be almost impossible. It is to be recommended only for VERY experienced players who are wanting a more difficult game.
If you are not seen doing an evil deed however, it will not affect your reputation.
There is a member of the flaming fist south of Beregost. If he attacks you, then you will suffer no loss of rep. If you kill a soldier of Amn in Nashkel however, you will be attacked from all directions.

You can play evil, but also play smart. Do the occasional good deed, it won't kill you, especially if you have nothing to lose by being the good guy. Even Himmler and Hitler knew the value of good PR. Killing everyone you encounter is Chaos, not evil, and will also cost you many side quests XP.

Two things to keep in mind,
1) Evil party members leave when your rep is too high (think 18), good party members leave when your rep is too low. You can increase rep by donating to temples and decrease it by doing evil stuff
2) honest <> good. I think sticking to your word is "lawful" or something like "true" (can't recall 100% someone who remembers please correct me).
My Advice in your first playthrough is to play a good character. Pick your party members to be also good or be careful not to raise your rep too high if you have evil parties as well.
The Evil path imho will just make your first playthrough less enjoyable.

The most safe route to avoid reputation loss when dealing with npc's you encounter, is the ******-for-tat strategy: only choose the hostile answer if they have proven to be hostile to you first.
