I just completed another play-through of Mass Effect 1. It has been a while so I don't really remember clearly perhaps but...weren't you able to continue playing after the final battle with Saren/Sovereign as you can with ME2? I just went through the battle twice in a row now thinking I goofed, wanting to continue playing afterwards to complete some missions but I am not given the obvious option to "continue playing?" like you get in ME2. Am I mistaken here?
Another quick question: One of the responses after the final Saren/Sovereign battle is about who you (Shepard) think would be a good human rep to serve on the council. What happens if you don't select and choose "It is not my decision to make"? Just curious about that.
ME 1 questions...

ME1 doesn't allow you to keeping playing after the last mission, unlike ME2. The councilor choice actually doesn't matter because of a glitch, ME1 doesn't actually save your choice. At the start of ME2 you will be asked who you put on the council, that choice is then implemented in the game.
