While all aspects of physical fitness are important in the military, endurance is the most important. As such the people who score highest on military physical fitness tests are more likely to be built like swimmers than power lifters. That isn't to say that strength isn't important, because it is. Many of the tasks a soldier or Marine may be required to do during wartime require good physical strength, such as lifting and carrying wounded comrades. But a high level of endurance or physical stamina and a low BMI is more important than brute strength. The military needs people that can endure carrying heavy loads over long distances without dropping from exhaustion, or who aren't likely to tire quickly from the physical exertions of combat.
A quick google for Mark Vanderloo shows him to be 6'2 185 lbs. (188cm 84k) I think that is probably a good baseline for Shep. Shepard probably is about the same height as he doesn't tower over other male characters, and while he does appear slightly more muscular/stocky than Vanderloo, it is isn't a large difference. I'd guess Shepard is probably around 190 - 195 lbs (86k - 88k) at most. That also puts him in the normal/healthy range for BMI. Anything heavier at about 6'2 makes starts to make him overweight.
