I always put Hawke at around 23 or 24 at the start of the game and 31 at the end.

He's also younger than Anders, Isabela, Varric, and Aveline

in the creator his face has wrinkles forehead mostly that makes him seem around 30. But since this is his canon face I'd say it's safe to argue this is what he's suppose to look like at the end of DA2.

The twins are supposed to be 18 at the start of the game and Hawke is described as being a few years older. I think the reason "canon" Sir Hawke looks older is because he was designed to look as he would at the end of the game, and he cannot be modified. Lady Hawke is a female and, in media tradition, has to look as young and HAWT as possible. Sadly, only males are allowed to look "good" with signs of age.

One of the reasons I love the mirror in the underground shop is that it allows me to design a Hawke and then show signs of aging after every chapter, though I've never gone to the extreme of making him/her look ancient. I might just make an "ancient" looking Hawke and then blame his/her looks on Merrill's blood magic.

I always guessed he was in his late or middle 20's.

Evidence shows he is in his younger or middle 20's though it seems.
