I can't count the times I got an annoyed "Not now, sister!", "It's a bloody templar, not now!" or, alternatively, "It's the blasted Knight Captain! Don't!"
Those are my favorite lines. Carver just sounds so frustrated. This one was my favorite:
Hawke: Something something mages are awesome
Cullen: Why would you say that?
Carver: Yes, why would you say that to the templar right in front of you?!
He seems to be in disbelief that his sibling is apparently the dumbest person in Thedas. XD
I know I'm responding to a three day old post, but I just have to say Carver's frustration over my inability to stay way from/keep my mouth shut around templars was a frequent source of amusement to me. I also found it rather heart warming. He's so surly and argumentative most of the time I was always like, "Aww. You really do care!" when he would do that.

Case in point, I was sad on a playthrough when I took Bethany without Anders to the deep roads. But with Carver... his goodbye to mother, and consequent scene when he gets sick and Hawke forced to kill him...
"...you always have asked for the world.."
"...and you always gave it."
Really broke my heart, that.

Edit
If you've never tried Awakening, you can get this quest if you chose the pre-made import "The Martyr."
Ugh. My first play through used my own martyr import, which is the one where Carver ended up a templar. My second play through, where he's become a warden, has used a different import and I'm too far along to go back now. Crap luck. I may have to let it slide for a while. At this rate, I'll never get around to finishing my archer.

A frequent source of amusement for me was listening to him get hit on by some random woman on the docks. It was so wonderfully awkward. Well, she was either hitting on him or day dreaming about what he would look like drowning, heh. And I agree with whoever it was that said the letter from Peaches, when playing a FemHawke, was a missed opportunity. I would've loved to wave it at him and crow "hello, Mr. Bravest Man I've Ever Known!" Rivalry +10

Ok, so maybe I went meta a little on my first run. I told myself I wouldn't, but that scene was unacceptable. At least when he left later anyway, I had the peace of mind of knowing he was still alive.

I agreeI adore Carver. It's odd... I didn't think I'd like him so much. Figured I'd like Bethany more. But... I like Bethany just fine, she's a fine sister, good character, but somehow she just doesn't have same impact on my Hawke that Carver does.

Oh, Maker, one conversation I never want to have with him. Good thing I adore Anders and take him everywhere. :innocent:

That's so sad. I don't think I'll be doing this anytime soon. Or ever.

The ambient banter is hilarious!
Random woman: "You look like a sinker.

The one on youtube is, I'm assuming, a Rivalry Carver, and he's all business, and that's cool. However, my Hawke, despite being an aggressive "red answer" Hawke, tried to work things out in Act I and push him towards Friendship. Carver's suddenly way more zen-jedi Warden. He's even cooler than my Hawke. Total bad ass.
Not to mention Carver doesn't come off as whiny at all if you play a Hawke that is mostly red answers. He comes off as more the beleaguered younger sibling to an oppressive control freak. I was pumped that he got out from under my character's thumb.

I found it on Youtube. It's one of those 'let's play Dragon Age' videos so the Carver part starts at 6:15.leggywillow wrote...

I was tickled that there were three different banters. By the end of Act I, I was just thinking geez, take it easy there cougar. No means no!

Hmm.. Carver seems to have all the personality that Bethany didn't have- It almost makes me want to play through as a mage to get to know him.. but then, would I have to side with the mages again? I don't want to really.
Na, you don't have to side with the mages if you don't wanna. My first mage did, but my second one changed her mind about mages ruling themselves after what happened to her mother. It doesn't mean she liked/agreed with Meredith, but just saw her as the lesser of two evils after that. Until she went, you know, all lyrium-idoled.

I'll probably try the rivalry path soon. Maybe.

On my first playthrough as a mage, I sided with the templars.
There are good reasons to side with either of the two. It was nice to know that Hawke's sibling would stand by his/her side no matter what decisions you make, though.
My worst fear was that Hawke and Bethany/Carver would end up on opposing sides and would have to fight on a far off mountain-peak.

Wait, there are three banters? Damn - missed the other two, it seems.

Woman: I can always tell a Fereldan chin.
Carver: *uncomfortable laugh* Yes, good day to you.
Woman: This your brother? He like the motion of the ocean?
Carver: Thanks, but no thanks.

I love Carver, maybe because I have a younger brother and we fight all the time.
When my mage saw this, she raged and spared no mage after this little incident with Thrask and Grace.

EDIT: Clarifying: He had brown eyes but was otherwise default. Same with Bethany. I apparently tend towards Hawkes that get the default face/hair ... except one really, really tragic Bethany. Her hair is horrible. I might let her die in the Deep Roads as an act of mercy.

Oh, in that YouTube video where Carver dies, he seems to look like the default Carver except with brown eyes. Is that a mod, or one of the other presets? I'd like to know; I kinda like Carver with brown eyes.
He has brown eyes in my current playthrough, too, and I chose the light brown eye colour option for my Hawke from the right side of the slider. I hope that helps.
