They could do a really bad love scene like in Underworld 2 where he has sex with her stomach. Unless Vampires undergo strange physiological changes that is. Or maybe they could run stock footage clips of trains going in to tunnels and rockets blasting off.

However though there isn't an afterwards scene, there is diologue with Taylor or Tali after the suicide mission if romanced, that talk about that night.
I agree that the dialogue before Garrus' romance scene is pretty one night standish. But during the actual scene especially near the end of it you can tell that it's more than that.

Maybe Tali and Jacob are the intended Love Interests (for male and female respectively), like Liara was for ME1.
