Okay, so I know how to make them draw swords thanks to a previous post (which is still on this page, amazingly!) but how do I get them to equip their shields, there being no action in the action menu for that. For that matter, how do I get them to draw Off-hand weapons?

It's the same function as drawing swords. Click on it and set the off-hand weapon value to true.
