What would the process be to change a companion's race from human to elf? Link to a tutorial, or in-depth explanation welcome. Thanks for any info you can spare.

A quick test seems to indicate that a simple UTC edit would be sufficient:

Party members possibly have multiple UTCs across all modules though - I'm not sure.
Also, in the above example, just overriding gen00fl_alistair.utc resulted in some screwiness in a save with Alistair already in the party. In that case, he had the new Elf head morph but retained the human body from the original:

Humorous, but perhaps not the desired result. Luckily, I had an old save at Ostagar before meeting him, which seemed to work OK. I gather this is due to residual info stored in the save file. Another problem, even in a new game, is that certain cutscenes, most notably close-ups, will be off in cases where there is a height difference. Going from an Dwarf to a Qunari for example will likely result in what was originally a close-up of the face being a close-up of the stomach.

Now my question is: where would I go in the toolset for each character's UTC file? And I would assume that editing it to change race is straightforward? (Apologies, writing this from a laptop w/o DA or the toolset installed).

This provides a very quick and easy to follow tutorial on that.
http://www.damods.co...php?topic=758.0
Bottom line: Create a Morph file for the DESIRED race (e.g. an Elf Female for Leliana)
Rename that file to replace the companion's current morph (e.g. hf_genfl_leliana.mor)
Place this file in the DragonAge/packages/core/override folder.
Go in the game. That companion will have a distorted appearance.
Select them, and type "runscript appearance #" where the # is based on what kind of model you want (2 for elves, 3 for dwarves, 15 for humans)
Voila. This is the simplest way to perform it, but not the most elegant. It also will have certain issues (cutscenes/dialogs will focus on the wrong part of the face, for instance).
There are also some mods which have been made to change companion races, try dragonagenexus.com
