What i don't want is downloadable items which should have been in the game from the begining. I won't download it anyway.

Good list.  I'd also want to see the first two games (with the DRM removed from ME1) and a model of the Widow sniper rifle in addition to models of the Normandy (SR1 and  SR2).

If anything I think a model of the Normandy will be a given. Anything else besides that is anyone's guess. An assault rifle would be nice; a sniper rifle would be nicer.

I like the idea of a Normandy model. If I recall, Bioware mentioned wanting a very special edition for ME3. Something like the night vision goggles included with another game.

Well, a set of die cast ships ( like in your cabin on the SR2 ) would be great.
For an ultimate edition to end the trilogy; that would be great. Maybe your original N-7 helmet, if they want to think big.

Seriously though:

• Some nice well made (wearable?) replica of an ingame item (Shepard's helmet? Dogtag?) or a miniaure of a ship (Normandy?). Something physical would be really nice.
• Making off would be interesting too.
• Some sort of overview map thing that shows all possible choices in ME I - III and impacts in later games (on a disc. To avoid spoilers you could unlock info that contains spoilers only after beating ME3 via savegame check)

Just DON'T put ANY exclusive DLC into it. Seriously, it just sucks.
If you absolutly have to use DLC as pircay protection, then why not give it to people who bought all three games? You know, as in reward your fans/people who buy your games instead of punishing them.

A steel case for the third game is a must. Aside from die-cast models of the Normandy the Carnifex and Widow would be cool as well.

So let's sum up what we'd like to see in a collector's edition of Mass Effect 3:

-Game disc along with artbook and/or lithographs.
-Models of the SR1 and SR2 Normandy plus a diecast replica of the Carnifex hand cannon or Widow sniper rifle (or both).
-Steel case for game disc(s).
-Mass Effect and Mass Effect 2 with all DLC for both ganes and patches applied. I would also add that I'd like the first game to be free of any DRM software.
-Game soundtrack.
-Packaging that befits a collector's edition of this magnitude.
