Funny I never heard anyone complain about lack of DLC content with a CE. For $130 I want physical stuff.
The dice set, cards, bust and Oren (curreny from the Witcher) really make it awesome!
I guess I'm on the other end of the spectrum myself. I for one don't care about collectible junk (statues, toys, nicknacks, etc.) with a physical copy of the game. I buy most of my games online through Steam or XBox Live. If I'm going to pay extra for a CE of a game I want extra CONTENT in the game ... exclusive gear, exclusive characters, exclusive levels, etc.
I've bought a few CE of games with extra "collectible junk" in the box and most of it ends up in the trash a few months/years later or ends up collecting dust on a shelf behind more important stuff. Exclusive in-game content is a gift that keeps on giving every time you play the game.

I just wanted to comment that yes, the extra material memorabilia can be not as satisfying as blasting enemies with a premium weapon, bragging to your friends that you have the top notch armaments, but in some cases if done right, a replica or, in ME3's case, hopefully dog tags, physical merchandise can be just as worth the money. Im sure that bioware will have armor, weapons, and maybe a mission (an integrated new character through out the game would be tough) so don't wory to much about lacking DLC. I'm sure bioware will surprise us for the end of the trilogy, and If you don't want the stuff, pawn it on ebay.
