I can seem to make one to my liking and any pointers would be helpful ^^

OK, I don't exactly know what you are looking for, and your taste may be different, but here are two:
For my Dalish elf warrior, I went for a "no-nonsense", slightly "savage" look, noble, but not pretty:

For my city elf rogue, I tried to be more "domesticated". Vanilla, if you like. As he's a rogue, a somewhat devious look. Eyes slightly squinty.

The most important part of the face are the eyes and eyebrows. There aren't many really good eye presets, you'll have to experiment. If the eyebrows are too high, you character will look permanently surprised. If they are too low, he'll look stern. (better than too high!).
Try not to be too generic - it's the flaws that provide character. ("Beauty is symmetry with a slight imperfection" - Anton Stankowski)
Before I create a character, I think about his personality, even events in his past that might have affected his personality.
Go back and forth between the different slider screens and follow your instincts...
