I just completed the whole of watchers keep without resting once, jan got killed twice and i did a few reloads, but not on the final boss, improved haste/bless/chant on my fighters a simmy of edwin and both edwin and the simmy using spell piercing/breach wands was more than enough to take him down while my fighters just pounded away (berkserking korgan at level 25 with crom faeyr and axe of the unyeilding+3, my main char kensai/mage at 13/18 with flail of ages+3 and belm, using tenser and valgyar level 22 with celestial fury and kudane). Is it just my party that is overpowered (Also got jan and viconia but they didn't do much this battle, viconia did fire of a few bolts of glory though, jan was out of spells after having gotten level drained at some point earlier in the keep)?

Demogorgon in vanilla BG is a joke. Originally, Bioware had a tougher version of him, but they removed it because they felt it was too hard for new players. As a result, they removed nearly all of his PnP abilities and nerfed him into the ground.

Your party is on the powerful side, but Demogorgon is a pushover to any party using good tactics. At some point during the game's development it was decided to weaken Demogorgon since many players might feel obligated to defeat him even though it was a completely optional battle. There is a mod out there to restore him to his true glory. I think that mod is also incorporated into Ascension. That said, even original Demogorgon is not nearly as vicious in BG2 as he would be in P&P. The fight with that party of monsters before unlocking the final seal is much harder in my opinion.

Doing all of Watcher's Keep without resting makes me wonder how much you skipped.
While it's possible to do many of the battles without much use of spells, you'd need a lot of healing (and I'm personally not much of a potion-chunker except in boss-fights) and you didn't even upgrade your equipment.
I agree on Demogorgon, but a number of the battles on level 3 and a couple on level 5 are of a sort where I'd dump a whole lot of spells into the fight (leaving very few on the crucial levels for later).

I did have 4 project images for edwin and used them all... I used one on each dragon, ring of gaxx, 2 rings of regeneration and axe of the unyeilding helped with the healing problem. Demi lich was easy with berserking korgan with crom fayer and mace of distruption while my main char used staff of the magi and the rest of the crowd stayed outside. Shield of balduran helped against most beholders while sunray was pretty good against normal litches... There aren't that many ridicolus fights in the keep... I couldn't upgrade my equipment because I am still in SoA.
