Another thing is that I'm pretty much used to "Drink potion, heal wounds instantly!", so I had a hard time not judging the game on that. Though it did increase healing rate... Even though I... for a lack of better words, "hated" it, I also liked it. It made it somewhat more realistic.
Because... Well, let's face it:
You break a bone or three in a battle and all you gotta do is "eat" or drink a health potion or snack or health pack or whatever and you are back in action. Which, when you look at it, doesn't really make much sense at all.
The alchemy part was interesting, but barely used it. Except for this mission in this crypt in Act 1 in the pitch black darkness. Made three potions to see there. Though I didn't find much there. Apart from four walls that were blocking the other rooms... Didn't knew how to get past them. Until Act 2.
I was actually glad that it had such a long effect on Geralt.
And the fact I had to collect codexes so that I could extract certain ingredients was a bit strange. But that wasn't much of a problem, since I never did any sort of alchemic stuff.
The funny thing about your point about potions is that there -is- a potion in TW1 that acts like a traditional insta-health top up. You just get it a little later into the game. The alchemy is great though, well worth getting into. You can safely ignore some of the more situational oils/potions/bombs anyway, but it is definitely worth getting the hang of crafting yourself plenty of swallows, tawny owls and blizzards (later in the game you get much better potions that you can start making if you have gotten the hang of it), and oils can make slogging your way through an extended necrophage/spectre area go much quicker, and can make fighting some other creatures much easier.
As others have said alchemy and ingredients are back in a big way in TW2. They made some changes (toxicity is simpler, potions don't seem to last as long and such) but they are apparently even more vital. You still need codex entries to collect certain ingredients as well I think.
It's definitely worth persevering. The game didn't really grab me until towards the end of Chapter II but I greatly enjoyed it by the end.
