Is this possible with an addon or using console somehow?

Lets say I want to make Neeshka a Shadow Thief of Amn

You can't do it with the console, but have a look at Neverwinter Vault. If a mod exists that lets you do it, it'll be there.

There are several mods. Search "companion multiclassing" in the Vault and you should find it.

There's also the Makeover by Kaldor Silverwand, but it adds a lot more things which I don't know if you want.
