I think that it would be great if we could have a Mass Effect game with a origins system similar to Dragon Age, where you could choose different races and backgrounds for your character.
Ideas about potential Mass Effect spin-offs

I've mentioned before something with the Krogan using the DA:O & A engine better yet a solid physics engine, any like Unreal will do, (though I heard that Carmack is working on a new engine... I think it is "id Tech5," I can wait for that).
Something like Mass Effect: The Urdnot Chronicles, but that's just me.
Edit: I thought about it and I can agree to that, better in another engine.

I think that the Unreal Engine would suit the purpose just fine, but the prospect of being able to view the ME universe from the viewpoints of the different races would a major selling point.

personally, i can't stand the the engine that DA:O run's in. i bought it, but returned it promptly, is it was nothing like ME. from the graphics, to the combat, to the map, to the voice acting. it is truly for hardcore rpg fans. as for myself, Bethesda pleases the rpg element in me.
back on track.
what i would like is any game in the ME universe. Halo has found it's franchise doing this, and they've been very successful in doing so. as long as the MEU spin-off stays canonical, i'd be sure to purchase the game.

If the game was completely focused on backstories, the game makers would have to make several seperate games pactically. Too much work for them.
They could try to tie the various stories together, but it wouldn't make sense, logic or canon wise.

I'm a little disappointed that you missed out on DA:O, YAHG. It was a pretty cool game and a wonderful throwback to the glory days of CRPGs. It's definitely best on PC, though.
As far as a ME spinoff, I'm all up for it. I don't know that I necessarily need an origins story, but I definitely hope to create a turian infiltrator (whilst not in an MMO).

Yeah, i like the idea of a ME: Origins (imagine playing with a Krogan Battlemaster, Asari Justicar, etc).
Other idea that i like is a 4x - RTS hybrid with the galactic map of Mass Effect and battles similar to those in the game Homeworld.
sigh so many dreams...

I'd love a Mass Effect space sim in the vein of Freespace.

A Sid Meier's Pirates type game would pique my interest considerably.

right, yeah i know, (note: this game can either take place before or after the events of the commander shepard story, if after then your choices should be imported since the citadel can be destroyed in a few of the ending in mass effect 3 and it should take place a hundred years after or so) you can basically play as any humanoid race (human, batarian, krogan, asari, salrian, turian, drell, qaurian) you can pick two places to start off from which already drastically changes the narrative, the citadel or omega, depending on your race, you're treated differently by the NPC's, your past is determined before starting the game, if you pick the citadel and you play as a batarian, you're treated poorly by other people and it will be harder to get what you want from certain NPC's, the same if you choose to play as any race on omega, there isn't as much as an importance on weapons, the ones you can use are pistols, assault rifles and shotguns, (sniper rifles will only be available on certain scenarios like exploring wide open terrain) the story can go many different ways based off of the choices you make, there is a conversation system just like the other mass effects only they carry more weight, the jobs available to you are based on your class, the old ones are back, turian/batarian/human/krogan soldier: you handle things like security, quarian/salarian/human/drell engineer:you handle things like hacking into things as well as being skilled in combat (engineer was pretty much one of the best classes in the old games) asari/turian/human/drell/krogan biotic you handle operation that need less gun play etc. etc. etc. you need to buy your equipment i.e. omni tools, guns, armor, bio amps, and stuff like that, you earn money by doing main story or side quests, sometimes in side quests you can get upgrade modules or a contact to help you with things by completing the mission (they won't always have money will they) one of the main things you can do if starting on the citadel is working for c-sec, if omega then working for merc bands, looters or Aria T'loak, if you start off right, over the long course of the game you can eventually overthrow Aria and have Omega in your grip, handling the economy, the mercs, you are also filthy rich (you would have to do things exactly right to this), if working for c-sec then possible main storyline could be travelling to Omega undercover, you can explore the galaxy as well, you will need enough money though to hire a ship, you can start off your own team and have great interactions with them, to explore planets you will have to buy a ground exploration vehicle, a mako. you can modify everything from your weapons and omni-tools to your appearance and armor, combat drones and melee
what do you think?
