Asari and their partners don't need penetrative sex to have a good time. The Asari can directly interface to the partner's nervous system. Therefore, Liara can just stimulate those nerve endings directly, in fact, sex with an Asari would probably be much better since the asari partner can get _all_ of the nerve endings at the same time.
tl;dr- the asari neuroelectronic mating process replaces mechanical sex.
Very true. On the other hand, in sex scene in ME1, they seemed to get pretty physical and most Asari seem to appreciate the physical side of a relationship. I'm guessing they're taking a "get both" approach to the whole matter to get the full experience, as it were.
I think the ME1 love scene was just BioWare being lazy, becuase Ashley and Liaras sex scenes are exactly the same, minus Liara's black eye thing...
The physical stuff was likely to get shepard in the mood. I am thinking that Liara wanted to get Shepard prepared for the actual melding process.
The analogy I am thinking of is starting a manual-transmission car from a dead stop--you have to have the engine at power before releasing the clutch.
In the LoTSB sex scene, Shepard grabs what can only be the 'azure'. So the Asari have some erogenous zones too. I'm thinking that the idea is to have both partners aroused before breaking out the neural interfaces. Consider that Liara has done non-intimate melding before -- after feros/virmire and she didn't even have to touch shepard. I think that there is a resonant effect at play here--if one partner is aroused, the other feels that arousal, and it increases from there.
This is a good point, would agree with your idea.
