All classes are fun. Just start on Normal or Veteran and play Adept, Sentinel or Engineer - they are easy and loads of fun. Plus you learn how all the cool biotic and tech powers work.
If you're up for a challenge, switch to Insanity next and play Soldier, Vanguard or Infiltrator - good in getting to know the defense system. I recommend Vanguard because it will improve your CQC skills and no matter the class, CQC with a shotgun is the most fun way to play imho.

If you decide to play as the Soldier class some time, keep your eye out for a little friend named the Widow Anti-Materiel Rifle. It's a good time.

To the OP: If you enjoy the traditional mage "stand back and blast" type of classes, you'll probably enjoy the Engineer and the Adept classes the most. That said, if you're new to shooters in general, the Soldier or Infiltrator will probably be easiest for you to get your feet wet.

I've made a few different sheps, but I've played the Adept the most (just finished the Archangel rescue). It's been a lot of fun.
I want to like the engineer, but can't quite get into it yet, I thought I'd like the combat drone more than I do.
The infiltrator is fun, and I can see the appeal, but I've died a few times as I was trying to get too close to the enemies.
Vanguard is fun, and I'll probably play through that next.

Soldier, definitely soldier I CANNOT stress that enough for beginners. When I first started ME1 and was reading the classes I was like WTF is a biotic? Does that use mana? And what's an overload is that another biotic and why do I have all these guns but cant aim with them? Just let me use my damn assault rifle already! I'm sick of these walking talking flashlights! Why doesn't any of these guns aim! WTF!
So anyway, ahem! Best advice is to play as a conventional soldier to get a feel for the game and learn what biotics and tech powers are through your squadmates. Then once you figure it out and would like to try a certain class, stop your soldier playthrough and start up a class you might enjoy more.

Noooo, play vanguard last, you won't be enjoying any other class once you play vanguard, there is just something about going headfirst into a group of enemies, destroying the one in the back, and than killing the rest in cross fire. It NEVER gets old.
