Otherwise, maybe just enemies that do a good job of using combos against the party, which can lend layers to combat. Seeing a party member get shattered could be awesome, or maybe an enemy use force field against crushing prison to use a shockwave against the party. Examples based on DA:O, of course, but you get the idea. Enemies tend to be variations on themes, so proper execution is just as important as variety.
And if it weren't for copyrights, fighting things like mind flayers and beholders would be nice... Awesome monsters those.
