 Personally, I do the following build and Talent progression:
Warrior (Shield) Strength: MaxDexterity: 30Willpower: 20Magic: NoneCunning: NoneConstitution: 20
With the following Talent Progression (Ordered by level)
Powerful, Shield Bash, Shield PummelShield BlockOverpowerThreatenShield Defense, Shield BalanceAssaultShield CoverBraveryShield TacticsBerserk (Berserker spec)Resilience (Berserker spec)Death BlowShield MasteryConstraint (Berserker spec)Shield ExpertiseFinal Blow (Berserker spec)
I use this cause I'm more of an offensive oriented player (I thoroughly believe the best defense is when your enemy is dead) who likes the balance sword and shield offers. Besides, by the time you need the defensive talents you've already started unlocking them. I recommend either Human Noble (for a good sword and shield early in the game) or dwarven noble (for the good shield mid to late game) not to mention both get shield bash from the go ;)

I'm not claiming my build is perfect in fact many would attest that you should grab champion rather than berserker.

Ultimately, it depends on how you play, if you like being more the tank then I'd recommend focusing more on dex than str so something more like:

Warrior (Shield) Strength: 42Dexterity: MaxWillpower: 20Magic: NoneCunning: NoneConstitution: 20 - 30

Powerful, Shield Defense, Shield BashShield Balance 
Shield Block
Threaten
Shield Cover, Shield Pummel

Ultimately it's about having fun so it falls to what you enjoy playing more as and going from there. Hope that helped :happy:

I prefer Strength built SnS warriors with a good sword as a main weapon. I've just finnished my Teplar/Reaver warrior tank on Nightmare, and it worked really well. Here you can see the stats for him: social.bioware.com/playerprofile.php
Templar is good for anti magic, 100% spell resistance is achievable as a templar. Reaver can make a healers job a lot easier by healing himself from corpses, and Frightening Appearance can lock down even an orge for enough time to hurt it badly. It will improve Taunt as well, the key talent for an SnS tank. Get the Strongest armor, and best shield you can get, and gear that makes you more resistant to magic, and that's all about it. :pinched:

Get enough STR to wear the heaviest armour, enough DEX for all the S&S talents, and then it's up to you which to keep pumping to the max. DEX will make you harder to hit (great for tanking), while STR will make you hit harder (good if you don't need a tank so much).

Berserker is a little redundant on a S&S warrior, but the other specs are good. Champion is probably best for a tank or a melee-heavy party. The first three talents for Templar are pretty meh, but the fourth one is pretty damn awesome.

I usually get strength and dex to the max I need and throw a little on Con from time to time. For Origins 40 is the max strength you need for armour of the elgion and dex needs to be somewhere in the 30s.



20 Con is perfectly fine, the idea is to take little to no damage when you get hit, not simply swallow damage up.



Templar I find vital for mage protection, also you can get into the knight commander's plate which makes you very resilient to spells. Champion is always good for someone in the thick of it.



Find ways of getting your strength up artificially so you can concentrate on dex first. Harvest festival ring and key to the city are two good picks.
