Um, no thanks. If they're bisexual in one game I would be even more disappointed if they weren't just as blatently bisexual in mine, because that would mean BioWare had completely marginalized the impact sexual orientation has on someone's character. It's a big part of who someone is, not their defining characteristic, obviously, but it still matters A LOT. It determines how you experience puberty, the people you choose to associate with, how you relate to others on sexual matters, etc. Making sexuality variable would change who the character is in a substantial way. Having it be a "this character will be this way in X's game and this way in Y's game" situation does not sit well with me.
On the subject of metagaming, I will happily admit to this. I do it constantly, but that's not what breaks immersion as far as I'm concerned, anymore than being the author of a work of fiction can break your immersion in it. I suspect that we have different definitions of immersion. And that's lovely. To each their own.
OK, I can kind of see your point, but remember that, for instance, Alistair and Leliana could become somewhat different people depending on whether you hardened them, and Morrigan and Velanna became a lot nicer if you could (be bothered to) get them on side.
My point is, it's not completely outrageous for a video game character to have a significantly different (or just a slightly different) personality between games.
Having said all that, I like the idea of characters being strictly gay or straight. Can you imagine the fangirl outrage if Fenris could ONLY be romanced by M!Hawke?

Yes, you could change Alistair, Leliana, Velanna, and Morrigan, but that was a little different. That was influencing their opinions, something that is inherently changeable. Sexual orientation isn't like that, that's something you're born with, not something that develops due to life experience. It would be like if in my game Fenris is a human Tevinter slave but in yours he's an elf. Race (that is, elf, human, dwarf) obviously has a larger impact on who someone is than orientation (in the context of Dragon Age), but the principle is the same. A human in Fenris's position would have a much different life experience than an elf, just as a bisexual would have a different life experience than a straight person.
Ohohoho, I can just picture the explosion of rage. I think I'd be torn between disappointment that I couldn't romance him and amusement.
Edit: Unless I made myself a Man!Hawke, that is.

True... but it was also possible to get through the game without learning that Lelianna was into women. Ok, if you listened to her talk about Marjolaine you might get the hint, but as far as I recall she never really hit on women aside from the main character. But still. Just because something is a part of someone's characterization doesn't mean it has to be on display. And in a game that means, effectively, it isn't there for people that don't do the right dance to put it on display.
