I'm not really sure why he'd say that "I'm a slave, doesn't that bother you?" line. In the scene where we meet him, he was quite adamant that he's not a slave. Then later, he casually refers to himself with a title that used to offend him? Doesn't make a lot of sense. Unless he's a bit self-conscious about it underneath that tough exterior.
This is only my non-expert opinion but...yeah I think the stoicism might mask a great deal of emotional turbulence.

I imagine that since he has no memory of anything other than being a slave (in particular his role as that of an escaped slave who is still hunted by his former master), that is a part of that he will closely identify with for a while. Since he hasn't achieved true freedom I also think perhaps there's a sort of wariness? Always be on guard, never be comfortable or else you'll be caught. Therefore "I'm a slave, I must a escape" is a way to keep him sharp, to be ready at any moment to defend himself and continue living free. I dunno. That's what think anyways!
