Now, take a look at post Origins romance resolutions. No matter how happy (or not) their original endings were, Morrigan gets the best bittersweet ending, given the choice warden follows her. Leli is out searching for missing warden, Zevran is separated from them, warden Alistair is separated from them, and eventhe married king Alistair is still separated from their loved one. Meanwhile, the Warden's 30 year clock is ticking, and I don't the impression that much, if any, of that time is spent alongside their beloved during the DA II events, prior to their whole dissapearing act.
Therefore, unless bioware writes decide to pleasantly surprise me, I won't hold my breath for a 'together-ever-after' resolution of DA II romances. I'll desperately hope for it, sure, but the signs are against it.
So, what does Fenris gains from the romance with Hawke? The greatest thing you'll ever learn is just to love and be loved in return quote nonwithstanding, there is probably heartbreak down that road, when Champion dissapears for whatever plot reason.
I'll admit that there's potential for this, although I (rather optimistically, perhaps) interpreted the whole thing as both the Champion and Fenris disappearing at the same time. As you mention in your post, he seems to be capable of tremendous loyalty and unlike Leliana and King Alistair, it's not as if he has any pressing commitments to attend to after Danarius dies.
Considering that one of the last pieces of dialogue he can say to Hawke in-game is the assurance that "nothing will keep me from you", I'm going to go with the idea that they stick together and they're not just going to throw the relationship away the second that things change or become difficult.
Additionally, I think there can be a middle ground between "together forever" and infinite heartbreak, too, so even if the Champion gets shipped out to Thedas' version of the Unknown Regions for some crazy reason and supposing her chosen LI can't come along for the ride and/or wait out the separation (which would surprise me), they can still "always have Paris"...I mean, Kirkwall. *Cue airport scene from 'Casablanca'*
I mean, nothing lasts forever and to have attachments is to risk heartbreak, right? They all live such dangerous lifestyles anyway that they risk separation by death and dismemberment every ten or fifteen minutes.
