Why not? Well, I like the mystery of not knowing. As soon as you see it, it takes away that mystery. Some people assume Tali is a pretty looking, almost human crature. Others assume she is more alien. Once that choice is made for you by the team, then it is set and cannot be changed.
For me, it is like when one of my favorite books gets made into a movie. No matter how good the actors may be, how well they read the lines, how suitable they actually are to play the role, they never quite live up to the mental picture I have created after years of loving the book.
Still, as I said, it isn't up to me, so we'll see what happens in ME3.

When the ME3 credits are rolling and they ended up not showing what at least one looks like I think I would be a little disappointed. My imagination must be lacking in this department

An excellent reason.
Part of the quarian mystique and Tali in particular, is that we don't know what they look like. They're humanoid, but not human. but how not human? We've seen almost a dozen alien races with greater or lesser degrees of humanoid appearance. Presumably quarians are this side of hanar on the human-ness scale
And in the end, does it really matter what she looks like?
