Matt Carofano had two interesting interviews (Nerdtrek and Destructoid):
1. Destructoid video interview with Matt Carofano:
- you have to feed "in order to keep going as a vampire" - this might suggest a contrast with Oblivion, where feeding resulted in you losing your vampire traits and if you wanted to remain powerful as a vampire, you couldn't feed.
- Romance/Marriage "you put on an amulet and it shows the other characters in the game you're interested"
- Matt's comment about spouses adventuring seems to indicate that every spouse can be asked to adventure with you, even if their day job is baking bread, for example.
- spouses cook a special meal for the PC once per day
- According to Matt, the devs haven't figured out what they're gonna do with DLC yet, but they are excited about adding new content and "new features"
- when asked if there is a location where you can change your appearance like Pinkerton lab in FO3 - Matt's response: "might be one of those features we add later"
- Dwemer Centurion pic on the loading screen - Centurions are considered very high level creatures, lots of varieties of Centurions in the game
- Throat of the World - climbing the steps is "a good trek" lots of nice views along the way.
- spells that "might do something similar" to hail
- close to 100 spells (previously we were told there were 85+)
- all spell effects are "incredibly unique, with unique perks for each skill"
- you can summon Dremora and beings from Oblivion
- crime system is a little easier on the player, if you steal food, etc., it's up to each NPC, depending on how much they like you, to decide what they will allow you to get away with.
- When asked about Daedric quests, Matt indicated there is "involvement with “The Prince” and challenges along the way that should satisfy the Daedric fans."
- Hand to hand is lethal, you can kill using your fists. (It has been previously mentioned that there are specific non-lethal "tavern brawls," so I assume these take place in specific environments, like taverns)
- when you complete the faction quest lines for The Companions, College of Winterhold, Thieves'Guild or Dark Brotherhood, you automatically become the leader of the faction.
- However, "previously you were done with an area of play once you become a Guildmaster, but in Skyrim you will be able to continue with specific guild gameplay after becoming the head of a guild."
- Dragons will not be using every shout available in the game. " It is possible to assume that every shout has been used in the past by a dragon, however during the game, the dragons only use certain shouts that make sense for the situations. They are incredibly intelligent AI creatures that use what is appropriate. Some shouts don’t make sense for dragons to use in this game and won’t be used."
- You start out being able to summon only one creature, but after you learn a particular perk in the Conjuration skill tree, you can summon two.
- You cannot dye armor and clothing.
- You cannot enchant arrows, but you can enchant bows
- No magic finishing moves
- Hundreds of different NPCs you can marry, if they want to marry you.
- Many "Lover's bonuses" available
- Spouse can cook for the PC once per day increasing your health.
- You can delgate tasks and send your followers to do things for you such as attack, collect food, buy weapons and more.
- No "bow chicka wow-wow" animations
- No bedrolls
Smithing perks:
- Steel Smithing Create Steel armor and weapons at forges. Improve by double.
- Arcane Blacksmith Improve magical weapons and armor.
- Dwarven Smithing Create Dwarven armor and weapons at forges. Improve by double.
- Elven Smithing Create Elven armor and weapons at forges. Improve by double.
- Orcish Smithing Create Orcish armor and weapons at forges. Improve by double.
- Advanced Armors Create scaled and plate armor at forges. Improve by double.
- Glass Smithing Create glass armor and weapons at forges. Improve by double.
- Daedric Smithing Create Daedric armor and weapons at forges. Improve by double.
- Ebony Smithing Create Ebony armor and weapons at forges. Improve by double.
- Dragon Smithing Create Dragon armor and weapons at forges. Improve by double.
Pickpocketing perks:
- Light Fingers (0/5) Pickpocketing bonus of 20% – Item weight and value reduce pickpocketing odds…
- Night Thief Pickpocketing sleeping people almost always works…
- Poisoned Place poisons in other people’s pockets silently to harm or kill…
- Cutpurse Pickpocketing gold is 50% easier…
- Extra Pockets Carrying capacity is increased by 100…
- Keymaster Pickpocketing keys always works…
- Misdirections You can pickpocket equipped weapons…
- Perfect Touch You can pickpocket equipped items…
Also, here is a detailed account from someone who played the public demo twice at PAX:
- I did encounter (and die at the hands of) a Wisp. They are now aetherial looking females rather than glowy orbs.
- One of the load screens mentions a hagraven: vicious half female/half bird baddies.
- Thistle gives resist frost when ingested.
- Continued my march toward Riften and discovered a dungeon called Haeram's (spelling?) Shame. Cool name, imo. Shortly inside a Vampire Thrall started peppering me with arrows. I took him out, this time with some upgraded steel weapons I had previously secured from dead bandits. Scouring the vamp's lookout post and found a nice mace that did extra fire damage. Found some more lockpicks too and was already to try my lockpicking on a nearby chest when time was called.
- Stamina is kinda important now. You run, your stamina gets drained in a hurry. You use a shield- same thing. LB is now for sprint (or burst). I found that I was using my speed in relative bursts and then really taking advantage of sprint against archers. Hold down LB, close very quickly and chop em up with weapons of your choosing. It doesn't appear feasible now to run everywhere and expect to be in top form if you get ambushed. Your blows will not land as solidly, as I understand things so far.
- Lockpicking appears exactly as FO3. Excellent change, imo.
- Argonians regenerate health faster than normal as their special attribute.
- Nords have Battlecry as their special. I assume this is some sort of frenzy.
- Breton are much more resistant to magika.
- Witnessed another player collect a shout for Animal Allegiance.
- Bounty for burning a chicken is 5 gold. LOL. Saw the game note this as hold-specific, i.e. Whiterun.
- Horses come to your defense. Provided a funny moment in the public demo.
- Enchanting altars have a skull surrounded by a bunch of candles. Kinda spooky.
- You can "pick" butterflies and bees.

Interestingly enough, my actions allowed me to witness a new addition to
the game: bounty hunters. I was actually attacked by two. The first
person was just a woman Orc. She didn’t have the title of a bounty
hunter, but she also wasn’t a bandit, otherwise it would have said so.
After I dealt with her I ran into an actual bounty hunter.
Unfortunately, my fire was no match for him, so I had to switch to the
boring-ass sword and shield. We sparred for a bit until I beat his head
into the ground with a lovely slow motion death sequence, which was
definitely ripped directly from Fallout 3.
