@ RB - I highly recommend watching the Beginner's Modding Series by Gopher on youtube. There are also tutorial vids there that will help explain your modding questions.
2 - There are some that can be broken, and others that have NPC's set to Essential which can also be problematic. Thing is, there are so many quests, and so much has been written on the game that walk-arounds should be quite possible to find.
3 - Orc
1 - Depends on your PC. Some can run 100+ mods on one save while others can only get away with 40-50 mods.
2 - Yes, you can kill some quest givers so do not go on massive killing sprees without a clean save.
3 - All races can be a good warrior as the racial stats and abilities mean almost nothing. You could be an Orc mage or Bosmer warrior and have no issues.
@RavenousBear - you're in for a treat! I love this game.
1. Depends on how many script-based mods you install; I have about 105 mods but only a handful actually employ scripting. No issues whatsoever. Also you might consider ENBoost and SKSE's memory patch feature to ensure your game can handle more mods than it normally could.
2. I've only accidentally killed quest givers in dungeons because most dungeons are full of hostiles and I get used to shooting first. I go into my 8th dungeon in a session and it turns out the NPC I just offed is a quest giver. Oops. Open console, type resurrect, continue...
3. Your call, but if you're going for a fitting theme I'd say one of the burlier races, like Nord or Orc. You could, for example, make a badass viking (commentary might not be SFW):
As for me, only need to finish Unearthed in Solstheim then I'm off to start the civil war. Alas, Bethesda decided this quest needed to take 9+ game days (I did everything else in 3 game days). I used TCL to get to the word wall on my last visit because they're going sooooo damn slow.

I found this picture on the Steam hub for Skyrim and I have to say its pretty much an average day in Skyrim.
If its hard to read, I am sorry I had to translate it from Russian to English.

I will take a look at those guides Elhanan has mentioned and ENBoost and SKSE patches to start with before I add any mods. My computer is newish with very high quality parts so I should be fine but better to be safe than sorry.
The fact that I can accidentally kill quest-givers gives me concern as i plan on playing a bit aggressive/bloodthirsty. I guess I will have to find the Skyrim wiki to avoid gutting those npcs.
The Orc and Khajit appeal to me the most since I like playing non-human characters.

Just remember these things before starting to mod your Skyrim.
#1 Steam may be easier to get mods from but Nexus has a larger selection that include many too large for Steam.
#2 Make sure you drop all the folders/esp. in the right place and do not split up meshes and textures. *If you want help manually installing mods, I can help*
#3 Always have a save before you install a mod incase something goes wrong. Some mods if you didn't install correctly or conflict can create CTDs which can corrupt saves rarely. Better safe than sorry.
As Gopher explains, using an auto-update feature is not recommended, so be sure to disable this on your Steam acct to prevent breaking your game.
Also for safety, this is another reason to use a mod manager rather than the easy Steam approach; to more safely install & uninstall mods for games. It simply helps to avoid broken saved games.

I finished Dragonborn last night - well worth the money (I got it before Legendary bundle was available). Got all the black books, and I'm going to miss the deep bass growling in the dungeons and apocrypha.
Started the Civil War siding with Imperials; that's going rather quick in that I'll easily finish it up tonight. I think I'll lengthen the experience by wiping out the various Stormcloak camps around Skyrim. Having a lot of fun, and had a flash of hope at one point where a Stormcloak captain became enraged at me because I was wearing my Imperial armor, but the flash vanished when I stepped out of the room, changed clothes, went back in, and he acted like he'd never seen me before. ![]()
New mod I have been using: more HUD; allows for additional info to appear when looking closely at items and ingredients. Thus far, it is helpful and does not distract from gameplay due to helpful settings.
I typically do not get HUD mods because I am quite fond of the vanilla ones. They also work much better with a gamepad.
