I was wondering. What is your favourite non-playable race in Elder Scrolls Lore.
Here are a list of my personal favourites. [Spoilers are used so that this post doesn't look too long].
Giants:
We know that they're capable of speech because of a "The Hungover" quest involving Sanguine.
Apparently the Dwemer are not what we'd call Dwarves, but were given this name by The Giants of Skyrim.
We know that they protect Mammoths. [Dragonborn is a nasty person going around killing the giants and mammoths].
We know that the Giants are present in Skyrim.
Yet despite the fact that we see them in Skyrim, we don't know much about them.
What is their culture?
Where did they come from?
Why can't you talk to a single Giant?
Non Playable Khajiit:
They come in many different varieties. From massive hulking beasts, to small household cats. Some have long beards (Grey Maine), some have thin skeletal physique perfect for stealth, some look like us. Depending on the phases of the moons on which they were born, they will turn out completely differently. So little wonder that they worship the moons.
Yes. That's right it's both moons that affect the Khajiit, not one.
Non Playable Elves:
These aren't the only Elven races though.
Aldmer: The elves we know today originally came from Aldmeris. They once conquered much of Tamriel and the Summerset Isles.
Alyleids: If you've played Elder Scrolls Oblivion, you're probably familiar with the Alyleid ruins. They're all over the province. It is said that they enslaved the Nords until they eventually rose up against their elven masters. It must be said that the Alyleids enslaved many tribes of men. Nords were one such race.
Chimer: They are the ancestors of the dark elven people. They followed Saint Veloth to Morrowind during the Exodus to practice fundamental ancestor worship based on Padomaic principles. High Velothi culture built the Daedric shrines that dot Vvardenfell, before degenerating into tribal Ashlander and later House Dunmer culture known today.
Dwemer: (Deep Elf) The most technologically advanced race in Tamriel. Apparently named "Dwarves" by a race of giants, they are actually regular sized elves. Tech savvy and cruel to both their own people and the Falmer. Visiting one of their ruins is a dangerous trek into a land of traps, chitin, and falmer. If the death traps, falmer and giant insects don't kill you, then the Dwemer's soul gem powered automatons will finish you off. Those brave enough to enter these dungeons have discovered a remarkable culture and treasure trove of lost technology.
The fate of the Dwemer is not unknown, but the answer is not universally accepted. The Dwarves became the golden skin of the Numidium.
Falmer: (Snow Elf) The Falmer were once pale skinned elves but after being tricked by the Dwemer they became the twisted creatures you see in Skyrim. Today's Falmer are blind creatures with incredible hearing and finely attuned senses. Back in the day they were the inhabitants of Skyrim, until the Nords from Attmora started slaughtering them and the Dwemer enslaved them.
Maormer: (Pirate Elves) They're the pale-skinned pirate elves of Pyandonea. Their ruler is the immortal King Orgnum, whom Redguards sometimes associate with the First Serpent Satakal, the god of everything.
Dremora:
Dremora are one of the types of creatures you can summon. However unlike imps, goblins and atronachs, some of the Dremora actually talk to you. There is even a merchant Dremora that you can summon in Skyrim.
Why would the Dremora allow themselves to be summoned by conjurers? Do they have a choice?
Whenever they do they are often treated as expendables that tank for their master.
Races of Akavir:
Tang Mo: Oppressed Monkey folk of Akavir. They hate the snake folk of Tsaesci and have aligned themselves with the Tiger folk Ka Po Tun.
Kemal: A daemon race who keep attacking the Tang Mo. They once tried to conquer Morrowind...
Ka Po Tun: Tiger people who want to become Dragons apparently.They are a warrior race who seek the domination or extermination of the Tseasci.
Tseasci: Snake people of Akavir. They apparently ate the humans of Akavir.
Humans: Nothing is known about the fate of the Akavir humans. Apparently they went to Tamriel and started the dragon slaying organisation known as The Blades. We associate them with Japanese looking samurai armour that is still worn by the blades today.
Early Humans:
The Imperials, Nords and Bretons are descendants of indigenous humans of Tamriel, though some claim they came from Attmora. This claim came from Imperial Propaganda.
Redguards on the other hand have a different lineage. They came from Yokudans.

Dragons:
One possible theory...
Akatosh may have created the Dragonrace we know today and has blessed a few people with the ability of dragon slaying and dragon shouting. In Elder Scrolls Skyrim you play the Dragonborn. A person blessed with the soul of a dragon who must then slay Alduin the World Eater. The Dragons were worshipped by people known as Dragon Priests, who ensured the Dragon dominion of Skyrim. You get to talk to some of the Dragons, but for the most part they're hostile individuals who go fly around in circles for ages and occasionally land to shout thu'ums of fire and ice.
That's not fully accepted in the lore community. Akatosh is considered part of a greater Aka spirit along with Alduin.
He is just a single Aspect of what's been collectively called the Time Dragon (Auri-El, Auriel, Satakal, Alduin, Alkosh, Akatosh) for simplification purposes. The dichotomous enantiomorphic confrontation between the Time Dragon and the Space Serpent (Lorkhan, Lorkhaj, Sep, Sheor, Shor, Shezarr) has repeated so many times throughout Tamrielic history that at this point they can't tell each other apart (Space-Time).
