Something i always found extremely lacking in these non d&d licensed games are the weak variety of creatures.
Another reason these older d&d games like Baldurs were so great. Alot of the enemies had different strengths and weaknesses, so you to use different tactics and all these different items that you acquired.
More to think about and figure out, making the combat much more interesting and less repetitive than these other games.

So far, I have enjoyed the chapters set in Tamriel, however.

Maybe some quests to have the Giants help you fight the dragons would be cool, also. Dragons are obviously going to be powerful, but I'd imagine that a Giant would have a fair chance at killing one, so it would be sweet to gain their allegiance in your war against the dragons.

I seem to recall at least one mention in an interview a couple months ago of a quest you can get from helping a Giant.

I'm a big RPG player, but namely more in the JRPG, or limited Western ones, and while I enjoyed the story in both of the Elderscrolls the pace was just to painful and too repititive for me to do a run all the way, and it has nothing to do with being "dumb" or a console Kiddie, in fact I very much enjoyed the books in the game, its just when I play either it feels like an MMO to me, and I just get sick of it, kinda the same with DA:O its pace and general "feel" makes it feel more like a choir than a game. And a friend of mine is in agreement the two of us made a bet to see who would finish it first (Oblivion), and that was two years ago, with neither of us winning.
So is there anything new to look forward too? A change in the pace? Or is this more of a rental for me, given my attitude toward the last two titles?

It seems there are a few ground-breaking new features, like the Radiant Story aspect, where quests are generated randomly based on specific things you have done, NPCs you have helpful or antagonistic relationships with, etc. (That is going to really screw up the wikis and walkthroughs
However, if you disliked Oblivion, I would hesitate to recommend Skyrim. You probably will want to download the demo or rent it first before deciding whether to buy. Personally, I've never played any MMO's before, so I can't give any feedback on that point.
I can relate to not finishing Oblivion - I have been playing it also for a couple years and never got around to finishing the main quest, but I still play it regularly (a heavily modded version), mainly focusing on side quests and walking around exploring the world without worrying about the main quest.
I haven't found any other games that seem to hold up as well where I can keep playing the a single playthrough for several hundred hours over a long period of time and enjoy it even years later.

You have to admit then, that "Whodunit?" is possibly one of the coolest quests from any RPG, right?

If you don't like the freeform gameplay because its too much like an MMO with its repetitiveness, there's nothing about this game I saw so far that might gather your interest. So, why don't you just...give up on the save your money and give up on the series?

NOT INTO THE ELDER SCROLLS!?!?!?! WHAT IS THIS MADNESS???!!?!?!
Being serious now, I doubt you will like Skyrim if you didn't much like either Morrowind or Oblivion. Todd Howard (the guy in charge of making it) seems to be aiming for a mix between Oblivion and Morrowind in terms of how the game feels. Oblivion was over-simplified and Morrowind was a bit too hardcore, but Skyrim seems to be aiming for right in the middle with accessible gameplay as well as more in-depth and challenging aspects. Combat has been overhauled in Skyrim so it is much more "action packed" and has more variety in what you can do (like 1 flame spell can function as a fireball, flamethrower, or fire rune on ground). More random activities have been added as well, like cooking, woodcutting, leather working, and maybe fishing.

One area which will be a departure from previous TES games, however, is spell casting. The Bethesda devs are going for something closer to Bioshock's plasmids in terms of the animations and game effects.
I have also read some articles that suggest a possibility of a much more powerful Telekinesis spell, as well as really interesting combos when you use different spells in each hand.
Still, as others have said, if you didn't like Oblivion I would suggest to rent it first or play a demo before buying.

Now if the meele combat was any good... I would love the Demons Souls melee combat in a game like this.

I found it pretty difficult to aim a bow correctly using 3rd person view in Oblivion (I use Duke Patrick's SCA Combat Archery mod), but for most other situations, 3rd person felt more natural.
The mouse wheel made it pretty convenient to switch back and forth between 1st and 3rd person, as well as zooming out with the 3rd person camera
