The elves believe they were fallen gods in the first place. Not existing in their current form is a much better state than Lorkhan's iniquity.

This quote is misleading because it makes it sound as if there will still be Elves and other such things, just not Men. This is untrue, because Men will also return to being Et'Ada when the Thalmor succeed. It's just that Men view their current, mortal existance as a good thing and will therefore resist the Thalmor's efforts at uncreating the world.

Because Talos is an aspect of Lorkhan, or Shor, the god responsible for the creation of the mortal world. Which also explains why the Elves outlaw his worship: they view the mortal plane as a prison which traps their immortal souls.
