Horses become extremely handy when you've just cleared a dungeon and you're overencumbered and you really want to fast travel to the other end of skyrim to unload your stuff. Without a horse, you're SOL in that situation (unless you enjoy walking really. really. slow....forever.) But with a Horse, you're good to go.
Exactly!!!!
And that's about it on their usefulness, I think.
They also:
1) sprint faster and infinitely longer than you can on foot
2) they can jump higher than you can on foot
3) they can climb steeper mountain slopes than you can on foot
And an added bonus I noticed: For those of you who like to roleplay wildlife hunters.... Deer, elk, goats, and foxes do not run away from Horses. So if you're on a horse you can gallop right up to, say, a deer, then get off the horse and kill the deer before it even decides to move.

At this point I drop something heavy that I don't need and move on.
QFT. Yes, there are some minor advantages to horses, mainly - IMO - ability to travel when overloaded. But really, I'm such a loot-****, I'm running around with thousands of gold constantly, so I can afford to drop some heavy, underpriced POS - iron armor is usually a good candidate.
Those advantages I think are more than offset by the disadvantages - needing to get off to fight all the time, their propensity to die, and more annoyingly, their habit of VANISHING while I'm killing something I just had to get off my horse to kill.
As for butterflies - anyone else find it a bit...creepy? disturbing?...that all you do to them is rip their wings off? Kind of . . serial killer in training-ish, ain't it?
