The rest really is just up to your gear and your skill level in the armor/attack skill in question.

Not doing enough damage and not able to take enough of it either - I suspect switching back to one-handed weapons is to blame for the former.
I need to figure this crap out and try to come up with a winning formula, because so far my characters are doing terribly.

Yep. All true, except Breezehome is the only house who's alchemy table has a sachel to store your ingredients in. As "meh": and "so what?" as that sounds, it ends up being the deciding factor (for me at least) later on when Alchemy becomes a major part of my build and I'm carrying around 150 Glowing mushrooms and 200 salt piles. Consequently, I usually find myself going there, instead of Honeyside when I'm focussed on alchemy, even though Both Honeyside and Proudspire manor initially contain tons upon tons more recipies and ingredients when you buy them..Joy Divison wrote...
