I just received the game in the mail and decided to roll with an elven
fighter/thief. I am trying to decide which thief skills, weapon
proficiencies, etc. I should go with. Also downloaded and installed
EasyTutu so factor that one in.
Decided to go with these stats after several rerolls.
Strength 18
Dexterity 18
Constitution 17
Intelligence 10
Wisdom 10
Charisma 10
Is this ideal or not?

Whether the roll is ideal is debatable.
Dexterity 19 would not yield big advantages, but there are a number of occasions where the attribute can be changed. If you maxed it out, you could theoretically reach dexterity 21 sometime in BG2 (Throne of Bhaal) - and this would be a pretty nice score.
Intelligence should in BG2 always have a score of 5n +1 (meaning: 6, 11, 16 or 21), because there is a creature that sucks it out in fives from you, and when you reach 0, you die. (so an Int11 character could bear one more hit than an Int10 character), but there is an opportunity to raise your intelligence during Baldur's Gate 1, so 10 should be okay.
Wisdom is not needed for a non-cleric non-Wish-casting character (and for Wish-casting, you can still drink a potion), so if you are powergaming, this attribute is the best one minimize in favor of others.
Charisma is in BG1 important, as only with this attribute high will you get all quests and the proper rewards for them. In BG2 people won't care much what you look like and on top of that there is an easy way of raising your charisma to 18 (or even 25). It's your own choice how much you want to sacrifice to roleplaying or BG1.
Strength and constitution deserve to be maxed out (which you did). There are ways to raise even these scores (semi-) permanently, but it's always better if your main character doesn't have to rely on those.
Since there are a number of thieves easily available at the beginning of Baldur's Gate 1 who can take care of locks and traps for you, I suggest you put all your first 150 -200 points into stealth so you can open every battle with a nifty backstab.
For backstabs, a staff is usually the best option. Otherwise I guess I'd go with short bows and/or scimitars / short swords. Scimitars and short swords are rather weak weapons when compared to your other options (katana, for example), but in BG1 you'll be mostly using your short bow anyway, and in the beginning of BG2 there are a scimitar and a short sword that are so powerful, it's possible you'll use them until the end of the game (except against certain opponents).

Also to back up the reasons for bumping dexterity above, if you play a certain way, your dexterity could also potentially be lessened by one. I'm not too knowledgeable on what mods fix what, so there may be fixpacks or mods that change this event somewhat.
