I'm going to download the two DLC for ME 1. My save in ME 1 is on the final fight with Saren. Is there any way I can play the DLC without starting a new game? (I have the 360 version btw)

No, you have to start a new game. Your last chance to do DLC is before you plot a course to Ilos.
