When playing ME3 I stood up and cheered when I went to explore vast worlds with beautiful 3d skyboxes like in ME1
When playing ME3 I stood up and cheered when I got a galaxy map that was nothing like the one in ME2 and everything like the one in ME1.
When playing ME3 I stood up and cheered when the planet scanning mini-game was killed and buried in a nameless grave.
When playing ME3 I stood up and cheered when they made guns with heat sinks make sense by letting you cool down after you run out of clips so you can use your favorite gun without modding the game. (and making sense with Bioware's own fail of an excuse for changing from heat to clips)

The Lazarus Project was finally explained
My squadmates started dressing like soldiers and not as superheroes
When I got a uniform for my crew that made them look like professionals, and not like a professional sports team.
I was finally reconciled with the VIrmire Survivor.
i sent an EVA team to scrape that Cerberus logo off the Normandy's hull
The Council stopped eating paint chips and finally remembered that they did in fact believe me about the Reapers at one point
The Collector's ultimate plan was finally revealed, and the end of ME 2 finally made sense.
Being a Spectre started meaning something again
I blew my personal terminal out the air lock
I got a real tank to explore planets with
A seemingly innocuous event in one of the earlier games actually turns out to be important, for good or for ill
