Most difficult boss batle in ME2?

.
- Jedore, Grunt recruitment mission.
Why is it difficult? You have a area with Limited cover for you and your squad. Jedore and the Heavy Mech will constantly fire missiles upon you not to mention the machine gun from the mech. Add to that 4 krogans closing on your position and you can easily be in a very tough spot.
.
Donavan Hock, Kasumi loyalty mission
Why is it difficult? There is a gunship that can come from multiple places that will always be harasing you, plus you have a constant respawning of a large group of enemys with mechs and other types of foes. And of course, you have only Kasumi by your side, not 2 squadmates as usual.
.
Geth Colossus, Tali recruitment mission
Why is it difficult There are a lot of geths in this area and one wrong move can cost a lot here. Geths take out your shiels very fast, add to that the fact that the Geth Colossus weapon stun you for a couple of seconds and you have a recipe for "critical mission failure". Also, your squad dies a lot in this area, and to finish, you have geth flamethrowers wtich are extremely deadle if they close on you.
.
Capitan Enyala, Miranda loyalty mission
Why is it difficult? Not only capitan Enyala is a extreme powerful vanguard, you also have a top engineer in the area and enemys that will respawn as you kill them. The area itself is not the easiest to take cover, making this fight a very difficult one.

I think the cover system(abundant/abusive) makes most fights a walk in the park.
If I had any trouble it was usually do to being crowd rushed.

Even on Insanity though, none of the boss fights in the game are terribly hard. I'd like to see more unique and harder bossfights in ME3 rather than just the generic Ymir mech/gunship/praetorian fights that are repeated. The bossfights in Lair of the Shadow Broker were nice and fresh (but still not hard enough).

I had no trouble with the Praetorians, though. I just kited them around objects.
Horizon - A truck to the left.
Collector Ship - the pillar in the back.

Donovan Hock was probably hardest, only because it requires a scripted event to trigger before you are able to kill him.

On insanity, the first collector ship with the platforms were a huge ****. I decided to give myself even more or a challenge and go with Tali and Thane....big mistake XD

On my normal playthrough, probably the human reaper just because I almost ran out of ammo by the end. I'm a infiltrator, so I could still run around cloaked and get ammo, but it was still a pain.

At least Infiltrator has Incinerate (from what I recall), so you can help with the reaper's armor.
I played a Soldier and basically ran out of ammo, I think all I had left was my heavy pistol MAYBE.

Praetorians are easy if you keep moving. Tela Vasir isn't hard, but the fight goes on waaaaay too long.

As long as you stay behind the cover at the start (which protects you from all angles) and gun down the mechs (who will keep advancing on you until you kill them), the Don Hock bossfight isn't too tough.

I thought you had to advance to the landing pad to get Kasumi to disable the gunship's shields. Was I mistaken? Kasumi told me to get her close, but you're saying I could just ignore her and sit back?
All you need to do to trigger the cutscene is knock off a layer of Hock's gunship's shields and then kill some of his ground troops. You don't need to advance forward.

That's true, but even on normal taking out the reapers armor with incinerate only took quite some time. I really wish I had adrenaline rush (whatever the soldier had as a unique ability) at some points though for my normal and insanity runs.

The Shadow Broker was also an interesting challenge.

Other than that, Jedore(from the list) I hated that heavy mech the first time I encountered it. Man that was annoying, especially with the Krogans deciding to run up to me and use their shotguns. Ugh.
