What does she actually do in the "boss fight" to reduce her power, besides opening a few doors? I checked mass effect wiki and couldn't find anything.

She put you and your team in stasis(the very first scene where shepardt glowed blue) to give the commandos and geth snipers time to surround/flank you.

Well, I theorise that Matriarch Benezia's biotic abilities have become significantly weakened during the events of ME1, especially when compared to her hypothetical power prior to joining Saren. Benezia is regarded as one of the most powerful individuals in the entire galaxy, and the biotic prowess of asari Matriarchs is said to be unparalleled. As a result, I think that Benezia was not fighting at full capacity when she was confronted by Shepard, and the other two accompanying squadmates. A Matriarch as powerful as Benezia would have destroyed Shepard in any other situation. Indoctrination is a probable cause of this weakened state, as corruption of the mind would cause a deterioration of biotic abilities.

Additionally, Benezia had also just finished extracting the Mu Relay coordinates from the Rachni Queen. I'm not sure if an asari can become overwhelmed if a meld is too intense, but the Rachni Queen states that she possesses the memories of multiple generations that came before her. Such a vast wealth of information could have been too intense for Benezia, especially when she states that she forcibly melded with the Queen, and was not gentle when she extracted the coordinates.

Considering all of this, I think Benezia was simply fatigued, and may have been suffering from mental exhaustion during the fight with Shepard. As the fight progresses, her power continues to weaken, until she is incapable of fighting any longer. That's my theory, anyway.

My adapt can put somebody in stasis, create a singularity, then throw and lift people everywhere. I know that's not really (in terms of lore) accurate to use powers in that quick sucession, hence the universal cooldowns in ME2, but it still doesn't make her seem like much of a matriach.
And they didn't really need time to flank Shepard, seeing as they were on the otherside of the room.

It's possible, and I agree on the indoctrination part.  I'm not sure about the Rachni part. I'm sure they would've mentioned if it had been too intense, but I suppose as you said she mentions that she was forceful.

I still find it a silly boss fight...plus with a shotgun in the actual fight, she goes down in like 2-3 shots. I just thought her whole character was a bit lame (and her ridiculious outfit), but I suppose she does add some interesting dialog with Liara around.

I have theorized that Benezia's gradual weakening was the result of her bringing those waves of geth and asari commandos into the battle, as if she needed to materialize them from somewhere, which took a lot of concentration or something. But her troops ought to stand ready for duty in the vicinity always, so she should not have to use a lot of energy to call them in.

A detail of significance here, however, if I remember correctly, is that she weakens only after a wave has been destroyed. This suggests that she somehow keeps the life force of those geth and asari stronger than usual, at the expense of her own. But I'm not sure if those troops are stronger than usual.

A third theory is that it's very destructive for a person who's essentially good at heart to be forced to act in evil ways. This could be the cause for the drain of her energy or life force.

Anyway, with all her extraordinary energy wasted for the final fight, she becomes a person with normal vulnerability, or weaker than normal life force, and goes down accordingly.
