Imagine what I'll do with a fully upgraded sniper rifle and tech cooldowns. Anything up to Horizon are basically testing grounds for your character builds. If you have all the upgrades then you'd break the game. There is a reason why you can't get level 3 biotic upgrades, 3 sniper rifle upgrades, 2 shotgun upgrades, and only 1 pistol upgrade, prior to Horizon.
You can beat the game without upgrades on NG+, but you'll be breezing through it if you have them all from the beginning.

M-15 Vindicator: no upgrades ( I know about the ammo limitations)
M-27 Scimitar: no ugrades (Don't really need an amazing shotgun)
M-98 Widow Anti-Material Rifle: no upgradesDamage from head shots because I love landing them.
M-6 Carnifex Hand Cannon: no upgradesDat fire power
M-900 Cain: 10,000 megatons of ****? I'll take it. Emergency last resort weapon or any similar HOLY **** moment.
Armor: Blood dragon or custom NZ
If they let me get the Collector armor, I'll probably use that with the collector rifle and heavy weapons.

As for the whole "Later missions are SO hard!" claim. They're not. Without upgrading or levelling the whole game, Garrus' recruitment mission is harder than say... any of the loyalty missions. It's not like enemies get stronger, smarter, or noticeably more plentiful.

I think you need to beat the game on hardcore to unlock insanity, but I don't remember.
The people in the videos tend to have played enough that they have the game memorized. It looks like they're being careless, but it's just that they've been through so many times that they know what to do, and can do it quickly.
The Widow fires slow, with low ammo, but does a ton of damage in a single shot. The Viper fires as fast as you can pull the trigger, with a ton of ammo, doesn't need to reload, and though it doesn't do as much damage per shot, you can get off a lot of viper shots in the time it takes for one widow shot, since the widow needs to constantly reload and the viper doesn't have any reload or ammo issues. Widow is, IMO, better for Infiltrator because it's damage bonus is for only one shot out of stealth. Viper, IMO, is capable of being better for soldier since rush's damage bonus lasts for the duration of the ability. You can either get off 1-2 powerful widow headshots, or unload most of the ammo from a buffed viper into an enemy's head if you're a good enough shot.
As for the vindicator, it's my rifle of choice too. It may not have too much ammo, but it has enough, and is well worth it considering it's accuracy, range, and power. I feel like the other assault rifles just waste ammo, but I prefer sniping, so it's just my playstyle.

Also, I noticed you said you wanted to play male to romance(if you can even call it a romance) Samara but you can do it with FemShep too. If you want to trigger it then you have to not be in a relationship and you have to be a paragon. You also have had to finish her loyalty mission and probably not fail it.
For weapons I prefer the Viper sniper rifle and the Revenant assault rifle. If you're getting the Revenant though then I suggest getting some accuracy upgrades because the accuracy on that thing is terrible. But you don't have to worry about accuracy that much because I believe it carries over 400 bullets so it doesn't matter if you miss alot. I did all this as a soldier.
And if you're going to save everyone on your playthrough then make sure you read the guide I directed you to.
